Mexican Street Corn

Mexican Street Corn
If you like good food, cold beer and America; then you will love these Mexican Street Corn! So good you might break out into song when you eat them. (The song Proud to be an American comes to mind).
Ingredients
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled feta cheese
- 1/2 teaspoon ancho chili powder
- 1 minced medium clove garlic
- 1/4 cup chopped cilantro
- 4 ears shucked corn
- lime wedges
Directions
- Set grill to high heat and allow preheating for 5 minutes. Oil the grill or grill plate.
- Combine mayonnaise, sour cream, cheese, chili powder, garlic, and cilantro in a bowl and stir.
- Place corn directly over hot side of grill to cook, rotating occasionally. Cook for about 8-10 minutes. Corn will be charred in spots on all sides.
- Use spatula to cover corn with cheese mixture evenly around entire ear. Sprinkle on a little extra cheese and chili powder for look and flavor.
- Serve each piece with lime wedge.
