Segura's Ceviche

We are all ready for spring right?! Warmer weather, spending time outside…. Segura's Ceviche is a great recipe to throw together and enjoy without all of the time consuming preparation and messy clean up. It is fresh and just happens to be a healthy option for all of you that are watching your waistline and working on your "Summer- Bods."

Ingredients
  • 2 lbs. of Cooked Shrimp
  • 1 lb. Cooked Crab
  • 1-1 1⁄2 cucumbers - peeled
  • 2-3 Roma tomatoes - depending on size and preference
  • 1 head of Cilantro - thinly chopped
  • 3-4 limes
  • Salt - Just guesstimate!
Preparation
  1. Boil shrimp, peel them and cut them into small pieces. (You can also buy the pre-cooked shrimp and use them. It will taste just as good!)
  2. Boil crab legs, crack them, shred or cut into small pieces.
  3. Peel and but cucumbers into small cubes.
  4. Chop up cilantro.
  5. Toss all the cut ingredients together until they are well mixed.
  6. Cut each lime in half and squeeze the juice over the entire mixture.
  7. Add salt to your liking!

This feeds 4-5 people… depending on how hungry they are maybe less. Elizabeth likes to add avocado and Clamato to her plate. So much more can be added! You can get creative! Like - carrots, fish, etc. There are many different ways to make this… This is just the simple basic way.
